Bien Sûr Cranberry – Sour Beer with Cranberries

A lively sour ale from De Dochter van de Korenaar—aged in fine gin barrels and enhanced with fresh cranberries. The result: a complex, fruity-tart beer with an elegant woody note and a bright red color in the glass.

During production, enough residual sugar remains in the grains to brew over 3,000 liters of another 7% ABV beer. This “second batch” is acidified for 18 hours before being brewed in the usual manner. A generous dose of cranberries is added during fermentation—afterward, the beer ages for at least one year in gin barrels.
