The Oude Gueuze Dark Cuvée René from Brouwerij Lindemans is no ordinary Gueuze—it is a document of Belgian brewing tradition, brewed in honor of René Lindemans, the fifth-generation man who put the family brewery from Vlezenbeek on the international map with his brother Nestor.
The "Dark" in the name is no coincidence: Instead of classic unmalted wheat, dark roasted wheat is used here—a bold break with centuries-old Lambic tradition that gives this beer its unmistakably deep brown color and a velvety warmth on the nose.
Three Years of Patience. A Moment of Awe.
After spontaneous fermentation—the heart of every true Lambic beer, where wild yeasts from the Pajottenland air initiate fermentation—this Lambic matures for two years in traditional oak foudres. Then comes the crucial step: another year in 20-year-old Cognac barrels, which give the beer an elegant depth found in no other Gueuze.
The result is a Gueuze that has naturally re-fermented in the bottle, with its carbonation—like champagne—created entirely by the second fermentation process. No pressure. No additives. Just time.
